Sun-maturation on terraces
Step 03

Sun-Maturation

Resting for 14 days on open terraces, the intense Indian sun acts as a natural catalyst, slowly infusing the spices.

The Martaban Tradition

We never use plastic or glass to mature our recipes. Our achar matures exclusively in traditional glazed ceramic jars, known as 'Martabans'.

This porous clay acts as a natural temperature regulator, allowing the pickle to breathe. It protects the delicate oils from harsh light while fostering the complex fermentation process that gives our recipes their distinctive, deep flavor profile.

Liquid Gold: Mustard Oil

The foundation of every Banarasi Achar is pungent, pure mustard oil. We source only cold-pressed oil, ensuring zero-heat extraction to preserve its natural pungency and nutritional integrity.
