True flavor cannot be rushed. Each chili is carefully slit and emptied by hand before being densely packed with a 12-spice mixture roasted over low heat. The stuffed chilies are then submerged in kachi ghani mustard oil and left to sun-cure for 14 days in ceramic Martabans, allowing the harshness of the oil to mellow into a deeply savory, complex profile.
